Ingredients
- 1 tsp red espresso Açaí and Blueberry Mix
- 1 medium banana
- 1 cup frozen blueberries
- 50ml chia seeds
- 50ml coconut
- 250ml almond milk
- 5ml vanilla extract
Instructions
- Mix 50ml chia seeds into 250ml almond milk and add 5ml vanilla extract
- Refrigerate over night or leave to stand until thickened
- In a blender, combine:
– your chia mix
– 1 medium banana
– 1 cup frozen blueberries
– 1 tsp red espresso Açaí and Blueberry Mix
– 50ml coconut - Pour into a bowl and top with toasted pistachio nuts, a drizzle of honey and any other toppings you fancy
How to make homemade almond milk
- Soak 140g almonds in water overnight
- Drain almonds and chop in blender
- Add a pinch of salt flakes
- ½ tsp cinnamon and ½ tsp vanilla extract
- Blend at high speed adding 750ml filtered water until nuts are well ground
- Strain through a fine sieve or muslin cloth
- Store in fridge as you would other milk
