Açaí Blueberry Bowl

Instructions

  • Mix 50ml chia seeds into 250ml almond milk and add 5ml vanilla extract
  • Refrigerate over night or leave to stand until thickened
  • In a blender, combine:
    – your chia mix
    – 1 medium banana
    – 1 cup frozen blueberries
    – 1 tsp red espresso Açaí and Blueberry Mix
    – 50ml coconut
  • Pour into a bowl and top with toasted pistachio nuts, a drizzle of honey and any other toppings you fancy

How to make homemade almond milk

  • Soak 140g almonds in water overnight
  • Drain almonds and chop in blender
  • Add a pinch of salt flakes
  • ½ tsp cinnamon and ½ tsp vanilla extract
  • Blend at high speed adding 750ml filtered water until nuts are well ground
  • Strain through a fine sieve or muslin cloth
  • Store in fridge as you would other milk
